How long does force carbonation take?
At the calculated set-and-forget pressure, a cold keg reaches the target carbonation in roughly one to two weeks with no adjustment. Keep the keg cold and the pressure steady.
What CO2 volume should I target?
Most ales sit around 2.2 to 2.6 volumes, lagers a touch higher, and wheat beers higher still. The calculator defaults to 2.4 volumes.
Why does colder beer need less pressure?
Colder beer absorbs CO2 more readily, so it reaches a given carbonation level at a lower regulator pressure. As the beer warms, more pressure is needed to hold the same volumes of CO2, which is why the calculator uses your beer temperature, not the fridge air temperature.
What is the difference between Cornelius kegs and commercial kegs?
Cornelius kegs (corny kegs) of 18 to 19 liters are the standard in homebrewing. They use ball-lock or pin-lock connections and are relatively inexpensive secondhand. Commercial stainless steel kegs (50 L Sankey) are more rugged but larger and more expensive. For home use, Cornelius kegs are ideal.
