How accurate are meal calorie estimates?
Within 10-20% if you weigh ingredients. Calorie counts on whole foods are themselves +/- 5-10%, so do not chase decimal places. Trends matter more than any single meal.
How are macros calculated?
Protein and carbs are 4 kcal/g, fat is 9 kcal/g, alcohol is 7 kcal/g, fiber averages about 2 kcal/g. Adding macros (g) times these factors gives total calories.
Do cooking methods change calories?
Yes. Frying adds oil (lots of calories). Grilling melts off fat (fewer). Boiling can leach water-soluble nutrients but does not change total calories of the meat itself meaningfully.
Should I count calories of the cooking oil?
Count what stays in the food. About half the oil used to pan-fry vegetables ends up in them; for deep frying assume nearly all the absorbed oil counts. A coated dish absorbs ~10% by weight of oil.
