Total pages equal books times average pages, days equal that divided by your daily pace rounded up, and the date is today plus those days.

What reading pace should I use?

25 pages a day is a sustainable default. Many committed readers manage 50 to 75 pages daily depending on the material.

How is the reading-hours estimate found?

Typical prose reads at about 1.5 minutes per page, so total pages times 1.5, divided by 60, gives an estimate in hours.

Should I finish every book in my pile?

No. You are allowed to not finish a book. Set aside what is not earning its pages and recount for an earlier finish date.
