Why n − 1 instead of n for sample SD?

Bessel's correction. Using n underestimates SD because the sample mean already absorbed one degree of freedom.

Does df matter for large samples?

Less so - as n grows, t approaches z and effects of df shrink. Below n ≈ 30, df matters a lot.
