How are IBUs estimated with the Tinseth formula?
IBU = (AA% × oz × utilization × 7,489) ÷ gallons, where AA% is the hop alpha-acid fraction and utilization depends on boil time and wort gravity. The 7,489 constant converts ounces and gallons into mg/L of iso-alpha acids.
What is hop utilization?
Utilization is the fraction of alpha acids isomerized into bittering compounds during the boil. In Tinseth it rises with boil time (about 0.05 at 5 min to 0.30 at 90 min) and falls as wort gravity increases.
How does boil time affect bitterness?
Longer boils isomerize more alpha acids, so a 60-minute addition contributes far more IBU than the same hops at 10 minutes. Late and flameout additions add aroma with little bitterness.
How does gravity reduce IBU?
High-gravity worts (more sugar) suppress isomerization, so Tinseth multiplies by a bigness factor of 1.65 × 0.000125^(gravity − 1). A 1.060 wort yields noticeably fewer IBUs than a 1.040 wort from identical hops.
